I love love love hummus. Seriously, I do. I’ve been making it at home for years now. I love the fact that you can create so many different flavours of hummus (roasted garlic and red pepper are my favourite) and that it only takes a few minutes to make.
However, recently I realized that I might have to put an end to my love affair with hummus. The reason being, chickpeas ALWAYS, ALWAYS give me stomach problems. Then, a miracle happened one day and I came across a hummus recipe that used zucchinis (I was surprised too!) instead of chickpeas. I have to admit, I had my doubts at first, but after trying it I knew that hummus will stay in my life forever.
I tweaked the recipe and adjusted it to my likings. So here I present to you my Zucchini Hummus aka no-bean hummus aka no-stomach-problems hummus aka it-tastes-just-as-good hummus.
Like I mentioned in the video, you can make this hummus using raw or steamed zucchinis. I personally prefer the taste of steamed zucchinis, but if I’m short on time, I use raw zucchinis as well.
Now you might be wondering whether you should peel zucchinis or not. I know, what a tough decision. Well, zucchini skin is full of vitamins and minerals, so it’s definitely a good idea to leave it on. I try to buy organic zucchinis and when I do, I never peel them. I do have to warn you that if you don’t peel the zucchinis, there will be little green pieces in your hummus after everything is blended. I don’t mind them at all, but I know some people might. So you’ve been warned.
I think this zucchini hummus is just as smooth and delicious as the traditional one. So I really hope you give it a try!
- 3 small zucchinis (or 1 large)
- ½ cup tahini
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp cumin
- 1 tsp chili powder (optional)
- Wash and peel the zucchinis. Then cut into chunks and steam for 5-6 minutes.
- Let zucchinis cool down for a couple of minutes.
- Combine all ingredients in food processor and blend until smooth.
- Store in airtight container in the fridge for 5-7 days.
