Here is another one of my favourite Quinoa Salad recipes with a Mediterranean twist. This one is definitely a must try!
You guys know I am a huge fan of quinoa. It’s pretty amazing how versatile it can be. I even use quinoa to make cakes! Most of the time, however, quinoa ends up in my salads.
Quinoa is a superhero in my books because of its amazing nutritional benefits and ease of preparation. Add water and quinoa to a pot, simmer for 10 minutes and you’re done. It could not be any easier.
The flavours of this salad are sensational, and it’s really easy to prepare. I usually make a big bowl of the salad in advance and have it for lunch throughout the week. If you decide to do the same, I recommend adding smoked salmon right before you eat the salad. This way the quinoa salad will stay fresh in your refrigerator for up to 1 week.
You can keep this salad vegan or add some smoked salmon to it if you’d like. Either way, this simple and delicious quinoa salad is going to rock you world! I promise!
MAIN: Mediterranean Quinoa Salad with Capers
SIDES: Grapes, Cherry Tomatoes, Snack Bar
- 3 cups cooked quinoa
- 3 tbsp capers
- 3 tbsp pine nuts
- 2-3 tbsp green onion
- 3 tbsp dill
- 2-3 garlic cloves, minced
- 2 tbsp lemon juice
- ¼ cup olive oil
- 3-4 salmon slices (optional)
- salt & pepper for seasoning
- Mix all ingredients in a large bowl.
- Serve warm or cold.
