I’ve always had trouble adjusting to waking up super early every day after the summer break. So why not save yourself some time in the morning by preparing your lunch in advance?
This bento lunch is ideal for those days when you don’t have a lot of time to make lunch but still want to bring something healthy and nutritious with you.
The star of this bento is definitely the hummus club sandwich made with alfalfa sprouts and fresh vegetables. You don’t have to make this sandwich exactly how I show you, just use your favourite vegetables (or whatever you have available at home).
You can also add a few cold cuts or some shredded chicken or turkey if you’d like. I decided to stick with just veggies, so the sandwich in this video is actually vegan.
Of course you don’t have to be going back to school to try this recipe. I’m sure all your coworkers will be asking you how you made this awesome sandwich if you bring this lunch to work with you.

MAIN: Hummus Club Sandwich
SIDE: Cherry Tomatoes, Broccoli Florets, Grapes
DRINK: Detox Cucumber, Lime, Mint Water
- 2 slices of whole grain bread
- 2 tbsp of hummus
- 1 few spinach leaves
- 2 tomato slices
- 2-4 red onion slices
- 8 cucumber slices
- ½ alfalfa sprouts
- 2 L water
- 1 small cucumber, sliced
- 1 lime, sliced
- 5-9 mint leaves
- Spread hummus on one piece of bread and cover with spinach.
- Put tomato slices, red onion, alfalfa sprouts and cucumbers on top of the spinach.
- Top with the second slice of bread.
- Combine all ingredients in a jar.
- Refrigerate for at least 4 hours before drinking.
