I’ve mentioned it before that I’m the only vegan in my family. I also happen to be married to an amazing human being who is pretty much a male version of me with a few tiny exceptions, including our diets. When my husband and I first moved in together, it was quite challenging to come up with meals that both of us could eat. It didn’t help that he is also one of the pickiest eaters that I know.
However over the past year and a half, I witnessed an amazing transformation – my husband quit dairy, started requesting more and more veggies and even suggested that I try to veganize some of his favourite Persian dishes (my husband is Iranian) so that we can enjoy them together. I’ll share more of my experience and thoughts on dating/marrying a non-vegan in another blog post because today is all about yummy vegan dinners that both vegans and non-vegans can enjoy.
